GR05- Bourbon Sidra Betulia
Luis Anibal Calderón is considered one of the most innovative coffee farmers in the municipality of Acevedo, in the Huila department of Colombia. His passion for specialty coffee and his deep understanding of the interaction between microclimate, soil composition, and coffee varieties have earned him international recognition.
At a time when many producers focused on mass production, Luis Anibal deliberately chose quality over quantity. This decision initially led to lower yields, but his focus on high-quality varieties and experimental processing methods paid off. Today, he is admired by many who were once skeptical of his vision.
His farm now serves as a model for other coffee growers in the region. Many seek his advice, wish to benefit from his knowledge, and acquire seeds from him.
FARM: VILLA BETULIA
VARIETY: Bourbon Sidra
Complex, elegant, and full of surprises.
Bourbon Sidra is one of the most intriguing coffee varieties in specialty coffee. Although its exact genetic origins are still debated, it is widely believed to combine Bourbon lineage with Ethiopian ancestry. What is certain is that it has captured the attention of producers, baristas, and coffee enthusiasts around the world for its extraordinary cup quality and expressive character.
In the cup, Bourbon Sidra is known for its exceptional clarity, vibrant acidity, and silky mouthfeel. It often reveals an elegant combination of floral aromas, ripe tropical fruit, citrus, stone fruit, and honey-like sweetness, finishing with remarkable balance and complexity. Its flavour profile is highly transparent, allowing the influence of terroir and processing to shine through.
Bourbon Sidra demands patience and precision in the field, but in the hands of dedicated producers, it consistently rewards that care with truly memorable coffees. Every harvest tells a different story, shaped by the landscape, the climate, and the craftsmanship behind each lot.
For us, Bourbon Sidra embodies what we love most about specialty coffee: curiosity, innovation, and the endless potential of a coffee variety to surprise and delight. It is a reminder that exceptional coffee begins with exceptional people, long before it reaches the cup.

This lot is produced through a carefully controlled fermentation.
Only fully ripe cherries are selected at harvest to ensure optimal sugar content and uniformity. After picking, the cherries are placed in bags and undergo a 72-hour aerobic fermentation (oxidation). Following fermentation, the coffee is dried slowly for about 20 days on raised African beds, ensuring even drying and the preservation of delicate aromatics
