This coffee was selectively harvested based on an average Brix level of 18%. The picking process took place over 3 days with the help of 5 pickers, during which the average temperature was 23°C.
The cherries then entered a process where only high-quality beans were selected. According to our internal quality scale, these beans qualified for processing as a washed microlot with exceptional quality.
The coffee was pulped and then underwent a 2-day oxidation phase, intended to showcase both the unique characteristics of our terroir and the Papayo variety.
Following this, we isolated yeast strains capable of naturally producing alcohols via their metabolic pathways. These alcohols were allowed to evolve into acetates over a 70-hour period, culminating in a total fermentation time of 90 hours. This process resulted in standardized levels of alcohols and organic acids, along with highly desirable sensory and organoleptic compounds, which are expressed clearly in the cup.
The coffee was then dried in our drying system for 25 days, with great care taken to preserve the aromatic compounds developed during fermentation and prevent their degradation.
